What is a counter flow study?

A counter flow study maps how guests move from entrance to order point, pastry display, and payment. We analyse queue visibility, barista reach zones, and whether the vitrine can be seen before guests commit to a table. Delivered as an annotated floor plan within 48 hours for €980.

How do you calculate Thonet-style seating density?

We use chair centre-to-centre spacing of 60–75 cm depending on table width, plus 90 cm minimum aisle width for tray service. Bentwood chairs need slightly more elbow room than stackable café chairs. Our seating density study produces a seat count, table schedule, and turnover estimate for your floor area.

Do you work with heritage-listed coffeehouses?

Yes. Our heritage renovation package (€5,200) includes Denkmal compliance notes, integration of original fixtures such as marble tables and wall panelling, and seating plans that respect protected elements while improving service paths.

Where should pastry display zones be placed?

At eye level, visible from the entrance and the queue line—not behind structural columns or past the toilets. We angle vitrines toward the decision point where guests choose between table service and takeaway, typically within three metres of the door.

Why do cloak hooks matter in a café layout?

Vienna's winter coat season creates pile-ups near entrances if hooks are missing. We plan vestibule zones with hooks, umbrella stands, and bag shelves so aisles stay clear during morning rush and evening service. This is included in service path layouts and full programmes.

How long does a full café programme take?

Typically three to four weeks from initial review to final contractor brief. This includes counter planning, seating density study, service path layout, and two revision rounds with your team.

Do you procure furniture?

No. We deliver plans, specifications, and quantities. Your contractor or furniture supplier handles procurement. We can recommend Thonet-style bentwood suppliers familiar with Viennese coffeehouse standards.
